Rasp de courgettes en bestrooi ze in een vergiet met wat zout. Druk er na 10 minuten het vocht uit. Dep ze droog met keukenpapier. </span></span></span></p> <p><span><span><span>Maak de bechamelsaus: breng de melk aan de kook en laat in een andere pan de boter smelten. Roer de bloem door de boter, verwarm dit mengsel enkele minuten en voeg geleidelijk – onder voortdurend kloppen, de hete melk toe. Voeg veel zout en peper toe.</span></span></span></p> <p><span><span><span>Bak de courgettes in boter tot ze gaar zijn en schep ze door de bechamelsaus. Roer de kaas door de saus, neem van het vuur en laat afkoelen. Roer er de eierdooiers en wat peper door. </span></span></span><span><span><span>Klop de eiwitten tot stijve pieken en vouw ze door de saus door. De soufflé lukt het best als het eiwit ongeveer dezelfde consistentie heeft als de basissaus. Pel en snipper de ui. Spoel de courgettes en rasp ze grof. Rasp de pecorino. Spoel de munt, pluk de blaadjes en hak ze fijn. </span></span></span></span></span></span><span><span><span><span><span>Verhit een scheutje olijfolie in een grote kookpot en stoof de ui en de knoflook zo’n 4 minuten aan. Voeg de courgette toe en roerbak 2 minuten op een hoog vuur. Voeg de orzo en de bouillon toe en dek de pot af. De ideale, gezonde snack waarmee je makkelijk fruit verwerkt. </p> <p>Fruitleer wordt gemaakt van een puree van overrijp fruit die vervolgens 6 à 8 uur gedroogd wordt. Dat kan in een droogoven, maar evengoed in de oven (het duurt enkel wat langer). </p> <ul> <li>Leg een siliconen bakvel op een bakplaat.</li> <li>Pureer of prak je overrijp fruit naar keuze. </li> <li>Strijk de fruitpuree gelijkmatig uit over het siliconen bakvel.</li> <li>Droog het fruitleer gedurende 6 à 8 uur in een op 60°C voorverwarmde oven of droogoven</li> <li>Eens het fruitleer droog is, laat je het tot kamertemperatuur afkoelen.</li> </ul> <p>Wanneer het fruitleer afgekoeld is, kan je het in repen snijden en tussen een vel bakpapier oprollen zodat het niet blijft kleven. Bewaar het fruitleer in een luchtdicht doosje. Op deze manier kan je het ongeveer 1 maand op kamertemperatuur bewaren of 1 jaar in de diepvries. Vooral bessen en zachtere soorten fruit zijn geschikt om fruitleer te maken. Denk aan aardbeien, abrikozen, ananas, appels, bananen, mango’s, kersen en allerlei soorten bessen zoals frambozen, aalbessen, bosbessen en bramen. Fruitleer kan je heel lang bewaren en is een goed alternatief voor snoep. In Duitsland, Oostenrijk en Denemarken staat het vooral bekend als kerstdessert. Maar laat je dat niet inhouden om al vroeger te proeven. Het is de ideale manier om seizoensfruit te verwerken. </span></span></span></span></span></p> <p><span><span><span><span><span>Een rumptopf bouw je op, je kan het dus gebruiken om al het zomerfruit in te verwerken. </span></span></span></span></span><span><span><span><span><span>Wat heb je nodig? Steeds gelijke delen vers (zacht) fruit en (kristal)suiker. Als je 500g fruit toevoegt, voeg je evenveel suiker toe. Gebruik een rum met een hoger percentage alcohol; minstens 54%). Werk eerder in lagen dan fruit door elkaar toe te voegen; zo geef je ze telkens de kans mooi te rijpen in de rum. Er past ongeveer 2 liter in een rumptopf.</span></span></span></span></span></p> <p><span><span><span><span><span>Maak het fruit schoon, spoel het eventueel voorzichtig af. Gebruik steeds gelijke stukjes, halveer de grotere fruitsoorten. Tips: besjes mogen met steeltje en al in de rumtopf. Grote aardbeien halveer je, pruimen en vijgen kunnen in kwarten of in kleinere stukjes. Weeg het schoongemaakte fruit af en doe het in de rumtopf. Weeg evenveel suiker af en voeg dit toe. Schenk rum in de pot net tot het fruit helemaal onder staat. De rumtopf dek je af met een deksel en laat je ergens op een koele, donkere plaats staan. Heb je een nieuwe lading fruit? Leg het er op dezelfde manier op. Doe zo verder tot de rumptopf vol is. Laat het dan minstens 4 maanden staan.
