Deze familiefavorieten zijn ideaal om jouw kind gezond te doen eten, zo is pastasaus ideaal om groenten in te verstoppen. Je kan bijvoorbeeld (gestoomde) groenten toevoegen aan je tomatensaus of als je moeilijke eters hebt: pureer eerst de groenten om ze daarna te verstoppen. De groene mac & cheese is daar een mooi voorbeeld van. Je kan edelgist meestal gewoon in je lokale biowinkel verkrijgen. Ze zijn niet alleen heerlijke smaakmakers, ze zijn ook nog eens enorm gezond. Edelgist bestaat voor bijna de helft uit eiwit en bevat alle essentiële aminozuren. Een portie van twee eetlepels bevat maar liefst 8 gram aan eiwitten, 4 gram vezels en 4% van de aanbevolen dagelijkse hoeveelheid ijzer. Bovendien zitten er mineralen en een hele reeks B-vitamines in. Goed voor onder meer je huid, haar, nagels en energieniveau dus. </div> <p><span>Deze Japanse pasta is een traditionele Japanse smaakmaker. Miso is een gefermenteerde sojabonenpasta, sterkt verwant aan sojasaus. Het is een <strong>gefermenteerd</strong> <strong>mengsel van sojabonen, rijst, zout en koji</strong> (een bepaalde schimmel) en ziet eruit als een dikke pasta. Er bestaan verschillende soorten. Meestal worden ze ingedeeld volgens deze smaakcategorieën: witte miso (shiromiso), rode miso (akamiso-)- of gemengde miso (awasemiso). Het is een veelzijdige en waanzinnige smaakmaker.</span></p><p><span>Je kan miso zowel koud als warm gebruiken, als smaakmaker, dressing, marinade, bouillon, in soep. In de Aziatische keuken wordt de smaak van miso zelfs <strong>‘de vijfde smaak’</strong> oftewel<strong> umami</strong> genoemd. Dit komt omdat miso niet zoet, zuur, bitter of zout smaakt, maar een typerende eigen smaak heeft. Umami komt voort uit twee Japanse woorden: </span><em><span>umai</span></em><span> (Japans voor heerlijk) en </span><em><span>mi</span></em><span> (Japans voor smaak). Samen vormen deze umami, ofwel ‘smaak van heerlijkheid’ of ‘heerlijke smaak’.</span></p><p><span><strong>Zelf maken? </strong>Miso wordt gemaakt van de natuurlijk gefermenteerde schimmel koji, sojabonen, gerst en zout. Geen enkele miso smaakt hetzelfde, elke Japanse streek heeft een eigen recept. Het is een beetje zoals met kaas: hoe langer de kaas rijpt, hoe sterker en unieker de smaak is. Ditzelfde geldt voor miso. Soms rijpt miso wel vier jaar voordat het gegeten wordt. <strong>Dat je van zo’n saaie, simpele sojaboon een mooi goedje als miso kan maken door het te laten fermenteren, is bijna magisch. vis perfect nabootsen met de magische groente uit de zee: zeewier. Zeewier is bij ons nog niet zo ingeburgerd als in sommige Aziatische landen, maar daar komt stilaan verandering in. Zeewier is niet alleen <strong>een smaakbommetje,</strong> deze groente is ook weinig belastend voor het milieu omdat er nauwelijks grond, zoet water of fossiele brandstof voor nodig is. Daarbovenop heeft zeewier een hoog eiwitgehalte en is het rijk aan vitaminen en mineralen. Het is dus ook een prima <strong>vleesvervanger</strong> voor vegetariërs. Het is, in tegenstelling tot wat vele mensen denken, <strong>makkelijk te bereiden</strong>. Je kunt er eindeloos mee variëren op je bord. Zo doet nori dienst als omhulsel voor sushi, maak je een zilte salade met wakame of gebruik je kombu als basis voor een smaakvolle bouillon.</span></p><ul><li><span><strong>Nori</strong> is gedroogd zeewier, waar bladen van zijn geperst. Nori wordt enkel gedroogd en geroosterd gebruikt. Je vindt het meestal in flinterdunne velletjes die gebruikt worden voor sushi. Het heeft een zilte smaak met een grasachtige ondertoon, qua smaak heeft het wat weg van paddenstoelen.</span></li><li><span><strong>Wakame is</strong> een bruinwier. Het moet altijd eerst gekookt worden en heeft een wat rubberachtige textuur. Wakame smaakt licht zoet met een zilte ondertoon.</span></li><li><span><strong>Kombu</strong> is een natuurlijke smaakversterker met een krachtige, kruidige smaak. Het smaakt bouillonachtig.<strong> </strong>Zilt en hartig tegelijkertijd: een schoolvoorbeeld van umami.</span></li><li><span><strong>Zeesla</strong> is een groen zeewier en lijkt op kropsla. Je kunt het ongekookt eten in een salade, als wrap of als vervanger voor nori bij sushi. De vegetarische variant is minstens even lekker maar uiteraard is een goed recept van levensbelang. <a href="https://www.karolaskitchen.be/diner/vol-au-veggie/">Karola's Kitchen</a> maakt het zo:</p> <p><strong>WAT HEB JE NODIG? </strong></p> <p>voor 4 personen:</p> <ul> <li>250 g kleine witte of bruine champignons</li> <li>250 g oesterzwammen</li> <li>1 prei</li> <li>1/4 knolselder of 1 prei</li> <li>olijfolie</li> <li>1 bakje vegan kipstukjes </li> <li>30 g (plantaardige) bakboter</li> <li>30 g bloem</li> <li>400 ml water</li> <li>1/2 tl kruidenzout (of ander zout - meer of minder naar smaak)</li> <li>een ruime hoeveelheid versgeraspte nootmuskaat</li> <li>4 el (plantaardige) room</li> <li>het sap van 1/4 citroen (of meer naar smaak)</li> <li>een grote handvol verse peterselie, fijngehakt (of 1 volle el diepvriespeterselie)</li> <li>versgemalen zwarte peper</li> </ul> <p><strong>HOE MAAK JE HET?</strong></p> <ul> <li> <p>Bereid de groenten voor: borstel de <strong>champignons </strong>schoon en snijd ze in kwarten (de kleintjes kan je heel laten of in twee snijden), scheur de <strong>oesterzwammen</strong> in reepjes, snijd de <strong>prei</strong> in de lengte in vier en vervolgens in fijne reepjes, snijd de <strong>knolselder</strong> in kleine blokjes.</p> </li> <li> <p>Verwarm 1 eetlepel <strong>olijfolie</strong> in een grote kookpot en stoof <strong>knolselder, prei, champignons en oesterzwammen</strong> op een laag vuur, gedurende 10 minuten, tot ze helemaal zacht zijn. Roer hierbij regelmatig om en zet het deksel tussendoor op de pot. Voeg indien nodig een klein beetje water toe, als de groenten te droog zouden worden.</p> </li> <li> <p>Scheur intussen de grootste stukken '<strong>kip'</strong> in kleinere reepjes. Verwarm 2 theelepels <strong>olijfolie</strong> in een pan met antikleeflaag en bak de stukjes enkele minuten aan beide kanten, tot ze goudbruin kleuren. Laat de “kip” met rust tijdens het bakken en schep de stukjes pas om wanneer er zich een gouden korstje vormt. (Als je te vroeg begint de prutsen, zal de “kip” veel feller kleven aan de pan. Als je wacht tot er zich een korstje vormt, komen de stukjes vlot los.)</p> </li> <li> <p>Breng intussen 500 ml <strong>water</strong> aan de kook in een waterkoker. (Bij voorkeur. Je kan ook met warm water uit de kraan werken, als je geen waterkoker hebt.)</p> </li> <li> <p>Als de groenten gaar zijn en de “kip” gebakken is, draai het vuur onder de “kip” dan uit en stort alle groenten bij de “kip”. Maak de kookpot waarin de groenten zaten hierbij zo goed mogelijk leeg. Zet hem terug op het vuur en smelt de <strong>(plantaardige) boter</strong> in de kookpot, op een laag vuur. Strooi geleidelijk aan de <strong>bloem</strong> bij de boter, terwijl je met een spatel beiden mengt. Laat het mengsel nog een paar minuten bakken nadat alle bloem werd opgenomen door de boter. (Zo verdwijnt de bloemsmaak.) Blijf hierbij voortdurend roeren. Schenk ongeveer <strong>de helft van het water</strong> in deeltjes, geleidelijk aan bij deze roux, terwijl het vuur aan blijft staan en je voortdurend blijft roeren. Gebruik een klopper in plaats van een spatel als je teveel klontertjes zou krijgen en klop tot je een gladde saus bekomt. Laat het vuur nog steeds op een lage stand aanstaan.</p> </li> <li> <p>Voeg 1/2 theelepel <strong>kruidenzout</strong>, een flinke hoeveelheid versgeraspte <strong>nootmuskaat</strong>, de <strong>(plantaardige) room</strong> en voldoende versgemalen zwarte <strong>peper</strong> bij de saus. Roer om tot de ingrediënten goed vermengd zijn en leng de saus aan met water tot deze de gewenste dikte heeft. (Ook later in het recept kan je de saus nog aanlengen of laten doorkoken om tot de gewenste dikte te komen, dus geen zorgen als je niet zeker bent dat het helemaal goed zit.) Voeg het sap van 1/4 <strong>citroen</strong> bij de saus, terwijl je deze omroert. Schep tot slot de <strong>peterselie</strong> door de saus. Hij weet als geen ander hoe je Vlaams stoofvlees maakt, maar dan zonder vlees: </p> <p><strong>WAT HEB JE NODIG?</strong></p> <ul> <li>800 g seitan</li> <li>250 g Parijse champignons</li> <li>1 wortel</li> <li>2 uien</li> <li>1 teentje knoflook</li> <li>3 flessen bruin bier (bijvoorbeeld Moinette van Dupont)</li> <li>2 eetlepels perensiroop</li> <li>2 sneetjes broden</li> <li>mosterd</li> <li>(plantaardige) boter</li> <li>2 kruidnagels</li> <li>enkele takjes rozemarijn</li> <li>enkele takjes tijm</li> <li>enkele blaadjes laurier</li> <li>peper</li> <li>zout</li> </ul> <p><strong>HOE MAAK JE HET?</strong></p> <p>Verwarm de oven voor tot 180 °C.</p> <ul> <li>Pel en snipper de uien. Kneus en pel de knoflook. Hak hem fijn en plet met een mes. Schil de wortel en snijd hem in kleine stukjes (brunoise). Borstel de champignons schoon en snijd ze in vier.</li> <li>Smelt een klontje boter in een kookpot en stoof de uien met de knoflook. Doe er de wortelbrunoise bij en laat even meestoven. Voeg er de champignons aan toe.</li> <li>Snijd of scheur de seitan in blokjes. Smelt een klont boter in een pan en bak de seitanblokjes portie per portie rondom aan.</li> <li>TIP Seitan is gemarineerd en heeft voldoende smaak.</li> <li>Doe de gebakken seitan bij de rest van de groenten.</li> <li>Giet het bier in de kookpot en doe er de perensiroop bij.</li> <li>Smeer mosterd op het brood en leg de boterhammen met de mosterdkant naar beneden in de pot. Zij zorgen voor de binding van de saus. Kruid met peper, zout en kruidnagels.</li> <li>TIP De seitan is gemarineerd in soja en die is van nature zout. Wees dus voorzichtig met het zouten.</li> <li>Bind de rozemarijn, tijm en laurier samen tot een bouquet garni en leg het in de pot.
